Ok, so I've been a little bit busy over the last 12 months launching our new sister business Hope & Me Interiors with my daughter Chelsea, which means there hasn't been much happening in regards to Blog posts!
Sunday's are my day off and my chance to cook some of my favourite meals and yesterday I made a chicken soup that has become one of my faves and after posting a pic on my personal instagram page I've had lots of requests for the recipe. It's been a chilly ol' day here in Tassie today so I thought I'd share it with you all, I'm sure it will become a favourite with you too! I've made a couple of little changes from the original recipe and have added a little cheat at the bottom if you're in a hurry to get dinner on the table!
The Best Chicken Soup - (original recipe from Ambitious Kitchen)
Ingredients -
1 tblsp oil
6 cloves of garlic minced
1 yellow onion diced
2 large carrots thinly sliced
2 celery stalks roughly chopped
1 tblsp freshly grated ginger
1 tsp ground tumeric
2 litres low sodium chicken stock
1 tsp freshly freshly chopped rosemary removed from stems
1 tsp freshly chopped thyme removed from stems
salt and pepper to taste
1 cup pearl cous cous
2/3 cup frozen peas
500g skinless chicken breast
(it's also great as a vegetarian dish, replacing stock with vegie stock and of course removing the chicken!)
Method
Place a large pot on medium heat, heat up the oil then add garlic, onion, carrots, and celery, saute until onions are transparent. Then add ginger and tumeric (add extra tumeric if you are warding off a cold as its great for inflammation!) cook for around 1 minute stirring through the vegies. Add your stock, fresh herbs and chicken breast cook for around 20 minutes and then add cous cous and simmer for another 10 minutes (or until chicken is fully cooked). Once the chicken is cooked remove and shred returning back to the pot along with the peas and cook for a further 5 minutes.
CHEAT: If you are strapped for time, grab a bbq chicken and use the chicken breast, shred and add when you add the peas - this makes it a super quick meal for busy families!
