I love coming across recipes that are quick and easy and tasty too! After posting this one last night there were a few of you interested in the recipe, so here you go! Spicy Mexican Chicken and Rice Salad

Another super quick and easy tasty weekly dinner idea, this one is a bit of an adaption from an original recipe so not everything has specific quantities or measurements! Spicy Mexican Chicken and Rice Salad Ingredients 2 x 250g packets microwave mexican rice 400g pack mexican salad mix (or similar) 1 punnet cherry tomatoes sliced in half 500g chicken stir fry meat cajun spice sour cream 2-3 mashed avocados 1 large packet corn chips fresh coriander chopped 2 limes cut into wedges Method Cook rice in microwave as per instructions Combine salad mix, sliced tomatoes and rice and set aside Sprinkle chicken with cajun spice (you can use as little or as much as you like depending on how spicy...

4 weeks in Europe

Pushing my terrible memory to the test here, but, going back to February 16th was the day i left little Launceston for London on my first European holiday. I'll just start with i totally get the hype about going to Europe, it really is something else! Tomato Tarts

I very special friend gave me a Donna Hay cookbook as a gift a few years ago and this recipe is one of my absolute faves! It's quick and easy and delicious! Great for a lunch or a lazy Sunday night knockup! Ingredients 4 sheets (680g) store-bought puff pastry, thawed 500g mixed heirloom cherry tomatoes 1 tablespoon extra virgin olive oil 3 cloves garlic, sliced 2 tablespoons oregano leaves sea salt and cracked black pepper 1 burrata, halved (you can substitute for mozzarella if burrata not available) 8 slices prosciutto 2 tablespoons small mint leaves 2 tablespoons small basil leaves Method Preheat oven to 200°C (400°F).
